Mediterranean Baked Haddock

 Ingredients:

For the Haddock:

  • 4 haddock fillets (about 6 ounces each), skinless and boneless
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried basil
  • Salt and black pepper to taste
  • Zest and juice of 1 lemon

For the Mediterranean Tomato Topping:

  • 2 cups cherry or grape tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and black pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C). Grease a baking dish large enough to hold the haddock fillets in a single layer with a bit of extra space.

  2. In a small bowl, combine the minced garlic, dried oregano, dried thyme, dried rosemary, dried basil, salt, and black pepper.

  3. Place the haddock fillets in the prepared baking dish. Brush both sides of the fillets with olive oil, and then sprinkle the spice mixture evenly over the fillets.

  4. Drizzle the lemon juice and sprinkle the lemon zest over the haddock fillets.

  5. In a separate bowl, combine the halved cherry tomatoes, sliced Kalamata olives, chopped red onion, fresh basil, and fresh parsley.

  6. Drizzle the olive oil and balsamic vinegar over the tomato mixture, and season with salt and black pepper. Toss to combine.

  7. Spread the Mediterranean tomato topping evenly over the haddock fillets in the baking dish.

  8. Cover the baking dish with aluminum foil and bake in the preheated oven for about 15 minutes. The haddock should be opaque and easily flake with a fork.

  9. After 15 minutes, remove the foil and bake for an additional 5 minutes or until the tomatoes have softened, and the top is slightly browned.

  10. Remove the baked haddock from the oven and let it rest for a few minutes before serving.

  11. Serve the Mediterranean Baked Haddock with the flavorful tomato topping on top. You can also garnish with additional fresh herbs if desired.

  12. Enjoy your delicious and healthy Mediterranean-inspired meal!

This Mediterranean Baked Haddock recipe combines the flavors of the Mediterranean with tender, flaky haddock for a light and satisfying dish that's perfect for a weeknight dinner or a special occasion.

Salmon Cakes

 Ingredients:

For the Salmon Cakes:

  • 2 (6-ounce) cans of salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped green onions (scallions)
  • 2 cloves garlic, minced
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 egg
  • 1 teaspoon lemon juice
  • 1/2 teaspoon Old Bay seasoning (or your favorite seafood seasoning)
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil (for frying)

For the Lemon-Dill Aioli (Optional):

  • 1/2 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon fresh dill, chopped (or 1/2 teaspoon dried dill)
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped red bell pepper, green onions, and minced garlic.

  2. In a separate bowl, whisk together the mayonnaise, Dijon mustard, egg, lemon juice, Old Bay seasoning, salt, and pepper.

  3. Pour the wet mixture over the salmon mixture in the large bowl. Gently fold and mix until all ingredients are well combined. Be careful not to overmix; you want the mixture to hold together but not become too dense.

  4. Divide the salmon mixture into 4 equal portions. Shape each portion into a patty, about 1/2 to 3/4 inch thick. Place the patties on a plate or tray lined with parchment paper.

  5. Heat vegetable oil in a large skillet over medium-high heat.

  6. Once the oil is hot, carefully place the salmon cakes in the skillet. Cook them for about 4-5 minutes per side, or until they are golden brown and crispy on the outside and heated through. Use a spatula to flip them gently.

  7. While the salmon cakes are cooking, you can prepare the lemon-dill aioli (if desired). In a small bowl, whisk together mayonnaise, fresh lemon juice, Dijon mustard, minced garlic, chopped dill, salt, and pepper. Refrigerate until ready to serve.

  8. Once the salmon cakes are cooked, transfer them to a plate lined with paper towels to absorb any excess oil.

  9. Serve the salmon cakes hot, with a dollop of lemon-dill aioli on the side. They also pair well with a fresh salad or steamed vegetables.

  10. Enjoy your homemade salmon cakes!

These salmon cakes are not only delicious but also versatile. You can enjoy them as a main course, in sandwiches, or even as a tasty appetizer. The lemon-dill aioli adds a refreshing and zesty touch to complement the flavors of the salmon.
