- 1/2 cup breadcrumbs

Instructions:
In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped red bell pepper, green onions, and minced garlic.
In a separate bowl, whisk together the mayonnaise, Dijon mustard, egg, lemon juice, Old Bay seasoning, salt, and pepper.
Pour the wet mixture over the salmon mixture in the large bowl. Gently fold and mix until all ingredients are well combined. Be careful not to overmix; you want the mixture to hold together but not become too dense.
Divide the salmon mixture into 4 equal portions. Shape each portion into a patty, about 1/2 to 3/4 inch thick. Place the patties on a plate or tray lined with parchment paper.
Heat vegetable oil in a large skillet over medium-high heat.
Once the oil is hot, carefully place the salmon cakes in the skillet. Cook them for about 4-5 minutes per side, or until they are golden brown and crispy on the outside and heated through. Use a spatula to flip them gently.
