Mediterranean Baked Haddock

 Ingredients:

For the Haddock:

  • 4 haddock fillets (about 6 ounces each), skinless and boneless
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried basil
  • Salt and black pepper to taste
  • Zest and juice of 1 lemon

  • 2 cups cherry or grape tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and black pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C). Grease a baking dish large enough to hold the haddock fillets in a single layer with a bit of extra space.

  2. In a small bowl, combine the minced garlic, dried oregano, dried thyme, dried rosemary, dried basil, salt, and black pepper.

  3. Place the haddock fillets in the prepared baking dish. Brush both sides of the fillets with olive oil, and then sprinkle the spice mixture evenly over the fillets.
