Skillet Chicken Parmesan with Artichokes

 Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (Italian-style if available)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil

For the Tomato-Artichoke Sauce:

  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) artichoke hearts, drained and quartered
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

For the Toppings:

  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. Season the chicken breasts with salt and black pepper on both sides.

  3. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese.

  4. Dredge each chicken breast first in the flour, then dip it into the beaten eggs, and finally coat it with the breadcrumb-Parmesan mixture, pressing gently to adhere the coating.

  5. In a large ovenproof skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 3-4 minutes per side, or until they are golden brown and crispy. Remove the chicken from the skillet and set it aside.

  6. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.

  7. Add the diced tomatoes, quartered artichoke hearts, dried basil, dried oregano, salt, and black pepper to the skillet. Stir to combine, scraping up any browned bits from the bottom of the skillet.

  8. Return the cooked chicken breasts to the skillet, placing them on top of the tomato-artichoke mixture.

  9. Sprinkle the shredded mozzarella cheese evenly over each chicken breast, followed by the grated Parmesan cheese.

  10. Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.

  11. If desired, garnish with fresh basil leaves before serving.

  12. Serve your Skillet Chicken Parmesan with Artichokes hot, either on its own or with pasta or crusty bread to soak up the delicious sauce.

  13. Enjoy this comforting and cheesy Italian-inspired dish!

Air Fryer Parmesan Chicken

 Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs (preferably Italian-style)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • Olive oil cooking spray

Instructions:

  1. Preheat your air fryer to 375°F (190°C). This will ensure it's nice and hot when you're ready to cook the chicken.

  2. In a shallow bowl or plate, combine the breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, salt, and black pepper. Mix these ingredients well to create the coating for your chicken.

  3. In a separate bowl, beat the eggs until they are well combined.

  4. Take one chicken breast at a time and dip it into the beaten eggs, allowing any excess to drip off.

  5. Next, coat the chicken breast in the breadcrumb mixture, pressing the coating onto the chicken to ensure it sticks well. Repeat this process for all the chicken breasts.

  6. Place a piece of parchment paper in the bottom of your air fryer basket to catch any excess crumbs and make cleanup easier.

  7. Lightly spray the breaded chicken breasts with olive oil cooking spray. This will help them get crispy and golden brown in the air fryer.

  8. Carefully place the chicken breasts in the preheated air fryer basket, ensuring they are not overlapping. You may need to cook them in batches if your air fryer is not large enough to fit all four at once.

  9. Cook the chicken at 375°F (190°C) for 12-15 minutes, flipping them halfway through the cooking time. The chicken is done when it reaches an internal temperature of 165°F (74°C), and the coating is golden brown and crispy.

  10. Once the chicken is done, carefully remove it from the air fryer using tongs or a spatula.

  11. Allow the chicken to rest for a couple of minutes before serving. This helps the juices redistribute, keeping the chicken moist and flavorful.

  12. Serve your Air Fryer Parmesan Chicken with your favorite side dishes, such as a salad, pasta, or roasted vegetables. Enjoy!

Feel free to customize this recipe by adding your favorite seasonings or herbs to the breadcrumb mixture for extra flavor. This crispy and delicious chicken is perfect for a quick and easy weeknight dinner or a special occasion meal.
