  • 2 ripe peaches, peeled, pitted, and sliced
  • 1 poblano pepper
  • 4 slices of your favorite bread
  • 2 tablespoons unsalted butter, softened
  • 4 slices of cheddar cheese
  • 2 slices of mozzarella cheese
  • Salt and black pepper, to taste

Instructions:

Roasting the Poblano Pepper:

  1. Roast the Poblano Pepper:

    • Preheat your broiler or grill to high heat.
    • Place the poblano pepper directly under the broiler or on the grill grates.
    • Roast, turning occasionally, until the skin is charred and blistered on all sides, about 5-7 minutes.
    • Transfer the roasted poblano to a bowl and cover it with plastic wrap. Let it steam for about 10 minutes.
    • After steaming, use a knife to scrape off the charred skin, remove the seeds and stem, and then slice the pepper into thin strips.

Assembling the Sandwich:

  1. Preheat a Skillet:

    • Heat a skillet or griddle over medium heat.
  2. Butter the Bread:

    • Spread a thin layer of softened butter on one side of each slice of bread.
  3. Layer the Cheese and Fillings:

    • On the non-buttered side of one slice of bread, place a slice of cheddar cheese, followed by some sliced peaches, roasted poblano strips, and a slice of mozzarella cheese.
    • Top with another slice of bread, buttered side facing up.
  4. Grill the Sandwich:

    • Place the sandwich in the preheated skillet or on the griddle.
    • Cook for about 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
    • Press the sandwich down gently with a spatula to help everything meld together.
  5. Serve:

    • Once the sandwich is golden brown and the cheese is oozy and melted, remove it from the skillet.
    • Let it cool for a minute before slicing it in half.
    • Serve your Smashed Peach and Poblano Grilled Cheese Sandwich hot.

This unique grilled cheese sandwich is a wonderful blend of sweet, smoky, and savory flavors. The combination of ripe peaches and roasted poblano peppers takes the traditional grilled cheese to a whole new level. Enjoy your delicious creation!
