Sweet Potato Casserole

 Ingredients:

For the Sweet Potato Base:

  • 4 cups mashed sweet potatoes (about 4-5 medium sweet potatoes)
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, beaten
  • 1 teaspoon pure vanilla extract
  • 1/2 cup milk (whole or 2%)
  • 1/2 teaspoon salt

For the Topping:

  • 1 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter, softened
  • 1 cup chopped pecans (optional, for added crunch)

Instructions:

1. Prepare the Sweet Potatoes:

  • Preheat your oven to 350°F (175°C).
  • Wash and scrub the sweet potatoes, then pierce them with a fork several times.
  • Place the sweet potatoes on a baking sheet and bake for about 45-60 minutes or until they are tender and can be easily pierced with a fork.
  • Remove the sweet potatoes from the oven and let them cool for a few minutes.
  • Once they are cool enough to handle, peel the sweet potatoes and place the flesh in a large mixing bowl.

2. Mash the Sweet Potatoes:

  • Mash the sweet potatoes until they are smooth and free from lumps. You can use a potato masher or an electric mixer for this step.

3. Prepare the Sweet Potato Base:

  • To the mashed sweet potatoes, add the granulated sugar, melted butter, beaten eggs, vanilla extract, milk, and salt.
  • Mix everything together until well combined and the mixture is smooth.

4. Transfer to Casserole Dish:

  • Grease a 9x13-inch baking dish or a similarly sized casserole dish.
  • Transfer the sweet potato mixture to the prepared dish and spread it out evenly.

5. Prepare the Topping:

  • In a separate bowl, combine the brown sugar, all-purpose flour, softened butter, and chopped pecans (if using).
  • Mix until the topping mixture is crumbly.

6. Add the Topping:

  • Sprinkle the topping evenly over the sweet potato mixture in the casserole dish.

7. Bake:

  • Place the casserole dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and the casserole is heated through.
