Ingredients:
For the Marinade:
- 1 pound (450g) flank steak or sirloin, thinly sliced into strips
- 2 tablespoons soy sauce
- 1 tablespoon rice wine or dry sherry
- 1 tablespoon cornstarch
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
- 1/2 teaspoon freshly ground black pepper
For the Stir-Fry:
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 bunch broccoli, cut into florets
- 1/4 cup water or beef broth
- 2 tablespoons oyster sauce
- 1 teaspoon soy sauce (for the sauce)
- Salt and pepper, to taste
- Cooked rice, for serving
Instructions:
1. Marinate the Beef:
- In a bowl, combine the thinly sliced beef with soy sauce, rice wine (or sherry), cornstarch, sesame oil, sugar, and black pepper.
- Mix well to coat the beef evenly with the marinade. Set it aside for at least 15 minutes while you prepare the other ingredients.
2. Prepare the Broccoli:
- Cut the broccoli into bite-sized florets. You can also peel and slice the broccoli stems if desired.
3. Heat the Wok or Pan:
- Heat a wok or a large skillet over high heat. Add 1 tablespoon of vegetable oil and swirl it around to coat the wok or pan evenly.
4. Stir-Fry the Beef:
- Add the marinated beef to the hot wok or pan in a single layer. Allow it to sear for about 1-2 minutes without stirring to develop a nice sear.
- Stir-fry the beef for an additional 2-3 minutes until it's browned and cooked through. Transfer the beef to a plate and set it aside.
5. Stir-Fry the Broccoli:
- Add the remaining 1 tablespoon of vegetable oil to the wok or pan.
- Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the broccoli florets and stir-fry for 2-3 minutes until they become bright green and slightly tender.
6. Create the Sauce:
- Pour in the water or beef broth to the wok or pan to deglaze it, scraping up any browned bits from the bottom.
- Add the oyster sauce and 1 teaspoon of soy sauce. Stir well to combine.
7. Combine and Finish:
- Return the cooked beef to the wok or pan and toss everything together.
- Stir-fry for an additional 1-2 minutes to heat through and let the flavors meld.
- Season with salt and pepper to taste.
8. Serve:
- Serve the stir-fried ginger broccoli beef over cooked rice.
