Stir-Fried Ginger Broccoli Beef




 Ingredients:

For the Marinade:

  • 1 pound (450g) flank steak or sirloin, thinly sliced into strips
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine or dry sherry
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/2 teaspoon freshly ground black pepper

For the Stir-Fry:

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 bunch broccoli, cut into florets
  • 1/4 cup water or beef broth
  • 2 tablespoons oyster sauce
  • 1 teaspoon soy sauce (for the sauce)
  • Salt and pepper, to taste
  • Cooked rice, for serving

Instructions:

1. Marinate the Beef:

  • In a bowl, combine the thinly sliced beef with soy sauce, rice wine (or sherry), cornstarch, sesame oil, sugar, and black pepper.
  • Mix well to coat the beef evenly with the marinade. Set it aside for at least 15 minutes while you prepare the other ingredients.

2. Prepare the Broccoli:

  • Cut the broccoli into bite-sized florets. You can also peel and slice the broccoli stems if desired.

3. Heat the Wok or Pan:

  • Heat a wok or a large skillet over high heat. Add 1 tablespoon of vegetable oil and swirl it around to coat the wok or pan evenly.

4. Stir-Fry the Beef:

  • Add the marinated beef to the hot wok or pan in a single layer. Allow it to sear for about 1-2 minutes without stirring to develop a nice sear.
  • Stir-fry the beef for an additional 2-3 minutes until it's browned and cooked through. Transfer the beef to a plate and set it aside.

5. Stir-Fry the Broccoli:

  • Add the remaining 1 tablespoon of vegetable oil to the wok or pan.
  • Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  • Add the broccoli florets and stir-fry for 2-3 minutes until they become bright green and slightly tender.

6. Create the Sauce:

  • Pour in the water or beef broth to the wok or pan to deglaze it, scraping up any browned bits from the bottom.
  • Add the oyster sauce and 1 teaspoon of soy sauce. Stir well to combine.

7. Combine and Finish:

  • Return the cooked beef to the wok or pan and toss everything together.
  • Stir-fry for an additional 1-2 minutes to heat through and let the flavors meld.
  • Season with salt and pepper to taste.

8. Serve:

  • Serve the stir-fried ginger broccoli beef over cooked rice.
