Kimchi Chicken Melt Sandwich

 Ingredients:

  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme

For the Sandwich:

  • 4 slices of your favorite bread (such as sourdough or ciabatta)
  • 1 cup kimchi, drained and chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mayonnaise
  • 1 tablespoon Sriracha sauce (adjust to your preferred spice level)
  • Butter, for grilling

Instructions:

For the Chicken:
