Ingredients:
- 1 pound ground turkey (93% lean)
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 2 (14.5-ounce) cans diced tomatoes
- 1 (15-ounce) can tomato sauce
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can corn kernels, drained (or 1 1/2 cups frozen corn)
- 2 cups low-sodium chicken or turkey broth
- 2 tablespoons chili powder (adjust to taste)
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- Optional toppings: shredded cheddar cheese, sour cream, chopped green onions, chopped cilantro, and diced avocado
Instructions:
In a large pot or Dutch oven, heat the olive oil over medium-high heat.
Add the chopped onion and cook for about 2-3 minutes until it becomes translucent.
Add the ground turkey to the pot, breaking it up with a spoon. Cook for about 5-7 minutes, or until the turkey is no longer pink and begins to brown.
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Add the chopped red and green bell peppers to the pot and cook for another 2-3 minutes, or until they start to soften.
Add the chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and black pepper to the pot. Stir well to coat the meat and vegetables with the spices.
Pour in the diced tomatoes, tomato sauce, black beans, kidney beans, corn kernels, and chicken or turkey broth. Stir everything together.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 30 minutes, stirring occasionally.
Taste the chili and adjust the seasoning with more chili powder, cayenne pepper, salt, or black pepper to suit your preference for heat and flavor.
Continue to simmer for an additional 10-15 minutes, uncovered, until the chili has thickened to your liking.
