Tomato Basil Salmon

 Ingredients:

  • 4 salmon fillets (6-8 ounces each)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes, drained
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Lemon wedges, for serving

Instructions:

1. Season the Salmon:

  • Season the salmon fillets with salt and black pepper on both sides.

2. Sear the Salmon:

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the salmon fillets, skin-side down, and cook for about 4-5 minutes until the skin is crispy and the salmon easily releases from the pan.
  • Flip the salmon fillets and cook for an additional 2-3 minutes on the other side until they are cooked to your desired level of doneness.
  • Remove the salmon from the skillet and set it aside.

3. Make the Tomato Basil Sauce:

  • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the drained diced tomatoes and chopped basil to the skillet.
  • Sprinkle in the crushed red pepper flakes if you want a bit of heat.
  • Cook for about 2-3 minutes, or until the tomatoes are heated through and the sauce has thickened slightly.
  • Stir in the grated Parmesan cheese until the sauce is creamy.

4. Serve:

  • Return the seared salmon fillets to the skillet with the tomato basil sauce.
  • Spoon some of the sauce over the salmon fillets.

5. Finish and Garnish:

  • Serve your Tomato Basil Salmon hot, garnished with additional chopped basil and lemon wedges for squeezing over the top.
