Shrimp Scampi with Pasta

 Ingredients:

  • 8 ounces (about 225 grams) linguine or spaghetti
  • 1 pound (about 450 grams) large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)
  • Juice of 1 lemon (about 2-3 tablespoons)
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper, to taste
  • Pinch of red pepper flakes (optional, for some heat)
  • Grated Parmesan cheese, for garnish (optional)

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil.
    • Cook the linguine or spaghetti according to the package instructions until it's al dente.
    • Drain the pasta and set it aside.
  2. Prepare the Shrimp:

    • Pat the peeled and deveined shrimp dry with paper towels.
    • Season them with a bit of salt and black pepper.
  3. Sauté the Shrimp:

  5. Deglaze with White Wine:

    • Pour in the white wine and scrape up any browned bits from the bottom of the skillet.
    • Let the wine simmer for about 1-2 minutes, allowing it to reduce slightly.
  6. Add Lemon Juice and Zest:

    • Stir in the lemon juice and lemon zest. Cook for an additional 1-2 minutes.
  7. Combine Shrimp and Pasta:

    • Return the cooked shrimp to the skillet with the garlic and lemon mixture.
    • Toss them together to combine.
  8. Add Fresh Parsley:

    • Stir in the chopped fresh parsley for a burst of color and flavor.
  9. Serve:

    • Serve your shrimp scampi over the cooked and drained pasta.
    • Garnish with grated Parmesan cheese, if desired.
