Shrimp and Pepper Stir-Fry

 Ingredients:

For the Stir-Fry Sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon cornstarch

For the Stir-Fry:

  • 1 pound (450 grams) large shrimp, peeled and deveined
  • 2 tablespoons vegetable oil, divided
  • 3 cloves garlic, minced
  • 1-inch piece of fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • Salt and black pepper, to taste
  • Cooked rice or noodles, for serving
  • Chopped green onions and sesame seeds for garnish (optional)

Instructions:

For the Stir-Fry Sauce:

  1. Prepare the Sauce:

    • In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, honey, and cornstarch until the cornstarch is fully dissolved. Set the sauce aside.

For the Stir-Fry:

  1. Marinate the Shrimp:

    • Place the peeled and deveined shrimp in a bowl.
    • Season them with a pinch of salt and black pepper.
    • Add 2 tablespoons of the prepared stir-fry sauce to the shrimp and toss to coat. Let them marinate for about 10-15 minutes.
  2. Heat the Wok or Skillet:

    • Heat a wok or a large skillet over high heat.
    • Add 1 tablespoon of vegetable oil and swirl to coat the pan.
  3. Stir-Fry the Shrimp:

    • Once the oil is hot, add the marinated shrimp to the wok.
    • Stir-fry for about 2-3 minutes, or until the shrimp turn pink and opaque.
    • Remove the cooked shrimp from the wok and set them aside.
  4. Stir-Fry the Vegetables:

    • In the same wok, add the remaining 1 tablespoon of vegetable oil.
    • Add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
    • Add the sliced bell peppers and onion to the wok.
    • Stir-fry for 3-4 minutes, or until the vegetables are crisp-tender and have some char.
  5. Combine Shrimp and Vegetables:

    • Return the cooked shrimp to the wok.
    • Pour the remaining stir-fry sauce over the shrimp and vegetables.
  6. Finish the Dish:

    • Stir-fry everything together for an additional 2-3 minutes, or until the sauce thickens and coats the shrimp and vegetables.
  7. Serve:

    • Serve your shrimp and pepper stir-fry hot over cooked rice or noodles.
    • Garnish with chopped green onions and sesame seeds, if desired.
