Hash Brown and Bacon Omelet Cups

 Ingredients:

  • 6 slices of bacon
  • 2 cups frozen hash browns, thawed
  • 8 large eggs
  • 1/4 cup milk
  • Salt and black pepper, to taste
  • 1/2 cup shredded cheddar cheese (or your favorite cheese)
  • 2 green onions, thinly sliced (optional)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C).
  2. Cook the Bacon:

    • In a skillet over medium-high heat, cook the bacon until it's crispy.
    • Transfer the cooked bacon to a plate lined with paper towels to remove excess grease.
    • Crumble or chop the bacon into small pieces and set it aside.
  3. Prepare the Muffin Tin:

    • Grease a 12-cup muffin tin thoroughly with cooking spray or butter.
  4. Make the Hash Brown Base:

    • In a bowl, combine the thawed hash browns with a pinch of salt and black pepper.
    • Press a heaping tablespoon of the hash brown mixture into the bottom of each muffin cup, forming a mini crust.
  5. Bake the Hash Brown Crust:

    • Place the muffin tin in the preheated oven and bake the hash brown crusts for about 10-12 minutes, or until they start to turn golden brown.
  6. Prepare the Egg Mixture:

    • While the crusts are baking, whisk together the eggs and milk in a separate bowl.
    • Season the egg mixture with a pinch of salt and black pepper.
  7. Assemble the Omelet Cups:

    • Remove the muffin tin from the oven.
    • Divide the crumbled bacon evenly among the hash brown crusts.
    • Pour the egg mixture over the bacon, filling each cup about 2/3 full.
    • Sprinkle shredded cheddar cheese over the top of each omelet cup.
  8. Bake the Omelet Cups:

    • Return the muffin tin to the oven and bake for another 15-18 minutes, or until the eggs are fully set and the tops are slightly golden.
  9. Cool and Serve:

    • Allow the omelet cups to cool in the muffin tin for a few minutes.
    • Use a butter knife or a small spatula to gently loosen the edges of the omelet cups, and then lift them out of the muffin tin.
  10. Garnish and Enjoy:

    • Garnish with thinly sliced green onions, if desired.
