- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/4 cup cornstarch
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1/4 cup low-sodium soy sauce
- 2 tablespoons hoisin sauce
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/4 cup water
- 1 tablespoon sesame seeds (optional, for garnish)
- Sliced green onions (optional, for garnish)
For Assembling the Tacos:
- 4 small flour tortillas
- 1 cup cooked white rice
- 1 cup shredded cabbage or coleslaw mix
- Sliced cucumbers
- Sriracha sauce (optional, for extra heat)
Instructions:
For the General Tso's Chicken:
In a bowl, toss the chicken pieces with cornstarch until they are well coated.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the coated chicken pieces and cook for about 5-7 minutes, or until they are golden and cooked through. Remove the chicken from the skillet and set it aside.
In the same skillet, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
In a separate bowl, whisk together the low-sodium soy sauce, hoisin sauce, rice vinegar, brown sugar, red pepper flakes, and water.
Pour the sauce mixture into the skillet with the garlic and ginger. Bring it to a simmer and let it cook for 2-3 minutes until the sauce thickens slightly.
Return the cooked chicken to the skillet and stir to coat it with the General Tso's sauce. Cook for an additional 2-3 minutes until the chicken is heated through and well coated with the sauce.
If desired, garnish the General Tso's Chicken with sesame seeds and sliced green onions.
For Assembling the Tacos:
Warm the flour tortillas according to the package instructions.
Place a spoonful of cooked white rice on each tortilla.
Top the rice with a portion of the shredded cabbage or coleslaw mix.
Add slices of cucumber for a refreshing crunch.
Spoon the General Tso's Chicken on top of the veggies.
Drizzle with Sriracha sauce if you want an extra kick of heat.
