Deep-Fried Turkey

 Ingredients:

  • 1 whole turkey (10-14 pounds)
  • Peanut oil (or other high smoke point oil) for frying
  • Dry rub or marinade of your choice (optional)
  • Salt and pepper to taste

Equipment:

  • Outdoor turkey fryer kit with a propane burner
  • Large pot (at least 26-30 quarts)
  • Turkey lifter or sturdy kitchen gloves
  • Meat thermometer
  • Fire extinguisher
  • Safety goggles and oven mitts

Instructions:

1. Safety First:

  • Set up the deep fryer outdoors on a flat, non-combustible surface, away from structures, trees, and flammable materials.
  • Ensure that the turkey is fully thawed and dry to prevent oil splatter.
  • Keep a fire extinguisher nearby, and never leave the hot oil unattended.

2. Measure Oil:

  • Place the turkey in the empty pot and fill it with water until the turkey is submerged.
  • Remove the turkey and mark the water level. This indicates the amount of oil needed. Dry the pot thoroughly.

3. Prepare the Turkey:

  • Remove the giblets and neck from the turkey's cavity. Pat it dry with paper towels.
  • Season the turkey with salt, pepper, and any dry rub or marinade you prefer. Ensure the seasoning is dry to prevent oil splatter.

4. Heat the Oil:

  • Attach a thermometer to the pot and fill it with oil to the previously marked level.
  • Heat the oil to 350°F (177°C). Use a propane burner for this step.

5. Lower the Turkey:

  • Turn off the burner and carefully lower the turkey into the hot oil using a turkey lifter or kitchen gloves. Slowly and gently to avoid splashing.

6. Cook the Turkey:

  • Maintain the oil temperature at 350°F (177°C) while frying the turkey.
  • Cook for about 3-4 minutes per pound. A 12-pound turkey typically takes 36-48 minutes. The internal temperature should reach 165°F (74°C) in the breast and 175°F (80°C) in the thigh.

7. Remove and Drain:

  • Turn off the burner and carefully remove the turkey from the oil. Allow the excess oil to drain back into the pot.

8. Rest and Carve:

  • Let the turkey rest for about 20-30 minutes before carving. This helps redistribute the juices for a juicy turkey.

9. Serve:

  • Carve and serve your deep-fried turkey alongside your favorite sides and condiments.

10. Dispose of Oil Safely:

  • Once the oil has cooled, strain and store it in a sealable container for future use or dispose of it properly according to local regulations.
