Chicken with Lemon-Caper Sauce

 Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil

  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons capers, drained

  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper, to taste

Instructions:

1. Prepare the Chicken:

  • Season the chicken breasts with salt and black pepper on both sides.

2. Sear the Chicken:

  • Return the cooked chicken breasts to the skillet with the lemon-caper sauce.
  • Spoon some of the sauce over the chicken.
  • Allow the chicken to heat through in the sauce for a couple of minutes.

5. Plate and Garnish:

  • Transfer the chicken with lemon-caper sauce to serving plates.
  • Drizzle extra sauce over the top.
  • Garnish with additional fresh parsley and lemon slices, if desired.
