Ingredients:
- 2 cans (15 ounces each) of black beans, drained and rinsed
- 2 cans (15 ounces each) of kidney beans, drained and rinsed
- 1 can (15 ounces) of pinto beans, drained and rinsed
- 1 can (28 ounces) of crushed tomatoes
- 1 large onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup corn kernels (frozen or canned)
- 1 jalapeño pepper, minced (remove seeds for less heat)
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 2 cups vegetable broth
- 1 cup diced tomatoes with green chilies (optional, for extra flavor and heat)
- 1/4 cup chopped fresh cilantro (for garnish, optional)
- Shredded cheese, sour cream, sliced green onions, and tortilla chips (for serving, optional)
Instructions:
In a large slow cooker, combine the drained and rinsed black beans, kidney beans, and pinto beans.
Add the crushed tomatoes, chopped onion, red bell pepper, green bell pepper, minced garlic, corn kernels, and minced jalapeño pepper to the slow cooker with the beans.
Sprinkle the chili powder, ground cumin, paprika, dried oregano, cayenne pepper, salt, and black pepper evenly over the ingredients in the slow cooker.
Pour in the vegetable broth and diced tomatoes with green chilies (if using) to the mixture. Stir everything together until well combined.
Cover the slow cooker with the lid and cook on LOW heat for 6-8 hours or on HIGH heat for 3-4 hours. The longer it cooks, the more the flavors will meld together.
About 30 minutes before serving, taste the chili and adjust the seasoning if needed. You can add more chili powder or cayenne pepper for extra heat, or more salt and pepper to taste.
Serve your slow cooker vegetarian chili hot in bowls. Garnish with chopped fresh cilantro and any additional toppings you prefer, such as shredded cheese, sour cream, sliced green onions, or tortilla chips.
Enjoy your hearty and flavorful vegetarian chili as a wholesome and satisfying meal.
This slow cooker vegetarian chili is perfect for busy days when you want a delicious, hands-off meal waiting for you at dinner time. It's also a great option for gatherings and potlucks.
