Meatloaf



Ingredients:

1 1/2 pounds ground beef (80% lean)
1/2 pound ground pork (you can use all beef if you prefer)
1 cup breadcrumbs (plain)
1/2 cup milk
2 large eggs
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper

For the Glaze:

1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon Dijon mustard

Instructions:

Preheat your oven to 350°F (175°C).


In a small bowl, combine the milk and breadcrumbs. Let them soak for about 5 minutes, or until the breadcrumbs have absorbed the milk.


In a large mixing bowl, add the ground beef, ground pork, soaked breadcrumbs, chopped onion, minced garlic, eggs, 1/2 cup of ketchup, Worcestershire sauce, oregano, thyme, salt, and black pepper.


Mix everything together thoroughly, but try not to overmix as it can make the meatloaf dense. Your hands are the best tool for this job.


Shape the mixture into a loaf shape and place it in a greased baking dish.


In a small bowl, mix the glaze ingredients: 1/4 cup ketchup, brown sugar, and Dijon mustard. Spread this glaze evenly over the top of your meatloaf.


Bake in the preheated oven for about 1 hour, or until the meatloaf is cooked through and has an internal temperature of 160°F (70°C).


Once done, remove it from the oven and let it rest for about 10 minutes before slicing.


Slice, serve, and enjoy your classic homemade meatloaf!
