Mac and Cheese

 Ingredients:

  • 8 ounces (about 2 cups) elbow macaroni or any pasta shape you prefer
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 1/2 cups milk (whole milk works best)
  • 1/4 cup unsalted butter (1/2 stick)
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (adjust to taste)
  • 1/4 teaspoon paprika (optional, for flavor and color)
  • 1/4 teaspoon garlic powder (optional, for extra flavor)
  • 1/4 teaspoon dry mustard (optional, for depth of flavor)
  • 1/4 cup breadcrumbs (optional, for topping)

Instructions:

  1. Cook the Pasta:

    • In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until it's al dente. Drain the pasta and set it aside.
  2. Prepare the Cheese Sauce:

    • In the same pot, melt the butter over medium heat.
    • Stir in the flour to create a roux. Cook and stir for about 1-2 minutes until the roux is light golden brown.
    • Gradually whisk in the milk to create a smooth mixture. Continue to cook and whisk until the sauce thickens, which should take about 3-5 minutes.
    • Reduce the heat to low and add the shredded cheddar cheese, grated Parmesan cheese, salt, black pepper, paprika, garlic powder, and dry mustard (if using). Stir until the cheese is completely melted and the sauce is smooth and creamy.
  3. Combine the Pasta and Cheese Sauce:

    • Return the cooked pasta to the pot with the cheese sauce. Stir until the pasta is well coated in the creamy sauce.
  4. Optional Crispy Topping:

    • Preheat your oven's broiler.
    • Transfer the mac and cheese to an ovenproof baking dish.
    • Sprinkle breadcrumbs evenly over the top.
    • Place the dish under the broiler for a few minutes until the breadcrumbs are golden brown and crispy. Keep a close eye to avoid burning.
  5. Serve:

    • Remove from the oven and let it cool for a few minutes before serving.
