Ingredients:
- 2 pounds beef stew meat, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons sweet paprika
- 1 teaspoon smoked paprika (optional, for extra flavor)
- 1 cup beef broth
- 1 cup crushed tomatoes
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 teaspoon caraway seeds (optional)
- Salt and black pepper, to taste
- 1/2 cup sour cream (for garnish)
- Chopped fresh parsley or chives, for garnish
- Cooked egg noodles or rice, for serving
Instructions:
Sauté the Beef:
- Turn on the Instant Pot and select the "Sauté" function. Heat the olive oil in the pot.
- Add the chopped onions and sauté for about 3-4 minutes until they become translucent.
- Add the minced garlic and sauté for another 30 seconds until fragrant.
Add Paprika and Brown Beef:
- Stir in both sweet and smoked paprika, then add the beef stew meat. Season with salt and black pepper.
- Sauté the beef for about 3-4 minutes, or until it's browned on all sides.
Add Bell Peppers and Caraway Seeds:
- Add the chopped red and green bell peppers and caraway seeds (if using). Sauté for another 2 minutes, stirring occasionally.
Add Broth and Tomatoes:
- Pour in the beef broth and crushed tomatoes. Stir well to combine, making sure to scrape up any browned bits from the bottom of the pot.
Pressure Cook:
- Close the Instant Pot lid and set the valve to "Sealing."
- Cancel the "Sauté" function, and then select the "Pressure Cook" or "Manual" setting. Set it to cook on high pressure for 20-25 minutes, depending on the size of your beef chunks.
Natural Release:
- Once the cooking cycle is complete, allow for a natural pressure release for about 10-15 minutes before carefully turning the valve to "Venting" to release any remaining pressure.
Serve:
- Open the Instant Pot lid and stir the Beef Paprika. Taste and adjust the seasoning if needed.
- Serve the Beef Paprika over cooked egg noodles or rice.
- Garnish with a dollop of sour cream and a sprinkle of chopped fresh parsley or chives.
