Ingredients:
- 1 cup dried chickpeas (or canned chickpeas, drained)
- 1/2 large onion, roughly chopped
- 2 cloves garlic, minced
- 3 tablespoons fresh parsley, chopped
- 3 tablespoons fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper (adjust to your spice preference)
- Salt and black pepper, to taste
- 1/2-1 teaspoon baking powder
- 4-6 tablespoons all-purpose flour
- Vegetable oil, for frying
Instructions:
Preparing the Chickpeas:
Soak the Chickpeas:
- If using dried chickpeas, place them in a large bowl and cover with cold water. Allow them to soak overnight. The chickpeas should double in size. Drain them before using.
Making the Falafel Mixture:
Combine Ingredients:
- In a food processor, combine the soaked and drained chickpeas (or canned chickpeas), chopped onion, minced garlic, fresh parsley, fresh cilantro, ground cumin, ground coriander, cayenne pepper, salt, and black pepper.
Process Until Coarse:
- Pulse the mixture until it reaches a coarse texture. You want the chickpeas to be finely chopped but not pureed.
Add Baking Powder and Flour:
- Sprinkle the baking powder and 4 tablespoons of flour over the mixture.
- Pulse until everything is well combined. The mixture should hold together when you squeeze it, but not be overly sticky. If it's too sticky, add more flour as needed.
Shaping and Frying the Falafel:
Shape into Balls or Patties:
- Scoop tablespoons of the falafel mixture and shape them into small balls or patties. You can use wet hands to prevent sticking.
Heat the Oil:
- Pour enough vegetable oil into a deep skillet or frying pan to cover the falafel. Heat the oil to 350°F (175°C).
Fry the Falafel:
- Carefully place the falafel balls or patties into the hot oil, making sure not to overcrowd the pan.
- Fry for about 3-4 minutes, turning occasionally, until they are golden brown and crispy.
- Use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to drain excess oil.
Serving:
Serve Hot:
- Falafel is best served hot. You can serve it in pita bread with tahini sauce, yogurt sauce, or hummus, along with your favorite vegetables like lettuce, tomatoes, and cucumbers.
Enjoy your homemade falafel, a delicious and satisfying Middle Eastern treat!
