Chicken and Broccoli Alfredo

 Ingredients:

  • 8 ounces (about 2 cups) fettuccine or your favorite pasta
  • 2 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 cups fresh broccoli florets
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon nutmeg (optional, for depth of flavor)
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Prepare the Chicken:

    • Season the chicken breasts on both sides with salt and black pepper.
    • In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until they are cooked through and no longer pink in the center. The internal temperature should reach 165°F (74°C). Remove the chicken from the skillet and set it aside to rest.
  2. Cook the Pasta and Broccoli:

    • While the chicken is cooking, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. In the last 3-4 minutes of cooking, add the broccoli florets to the boiling pasta water. Drain the pasta and broccoli together.
  3. Prepare the Alfredo Sauce:

    • In the same skillet you used for the chicken, melt the unsalted butter over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
    • Pour in the heavy cream, stirring constantly. Cook for 2-3 minutes, allowing the cream to heat through and slightly thicken.
    • Reduce the heat to low, then add the grated Parmesan cheese, garlic powder, and nutmeg (if using). Continue to stir until the cheese has fully melted and the sauce is creamy. Taste and adjust the seasoning as needed with more salt and pepper.
  4. Slice and Assemble:

    • Slice the cooked chicken breasts into thin strips.
  5. Combine Everything:

    • Add the cooked pasta and broccoli to the Alfredo sauce in the skillet. Toss to coat the pasta and broccoli evenly with the sauce.
    • Gently fold in the sliced chicken.
  6. Serve:

    • Transfer the chicken and broccoli Alfredo to serving plates.
    • Garnish with chopped fresh parsley, if desired.

Enjoy your homemade chicken and broccoli Alfredo as a comforting and creamy pasta dish that's sure to satisfy. It's perfect for a cozy dinner at home or for entertaining guests.
