Blackberry Clafoutis

 



Ingredients:

  • 2 cups fresh blackberries
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • Butter or cooking spray for greasing the baking dish
  • Powdered sugar, for dusting (optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

2. Prepare the Baking Dish:

  • Grease a 9-inch (23 cm) pie dish or an ovenproof skillet with butter or cooking spray.

3. Arrange the Blackberries:

  • Spread the fresh blackberries evenly in the greased baking dish.

4. Prepare the Batter:

  • In a mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt until well combined.

5. Combine Wet Ingredients:

  • In another bowl, whisk the eggs, whole milk, vanilla extract, and almond extract (if using) until smooth.

6. Mix Dry and Wet Ingredients:

  • Gradually add the dry ingredient mixture to the wet ingredients, whisking continuously until you have a smooth batter.

7. Pour Batter Over Berries:

  • Pour the batter evenly over the blackberries in the baking dish. The berries may float a bit, but that's okay.

8. Bake:

  • Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the clafoutis is puffed and lightly browned on the edges. It should be set in the center, but a toothpick inserted into the center should come out clean.

9. Cool Slightly:

  • Remove the clafoutis from the oven and let it cool for a few minutes. It will deflate slightly as it cools.

10. Dust with Powdered Sugar:

  • If desired, dust the top of the clafoutis with powdered sugar just before serving.

11. Serve Warm:

  • Serve the blackberry clafoutis warm. It's often enjoyed as a dessert, but it's also delicious for breakfast or brunch.
