Ingredients:
- 1 pound (450 grams) beef sirloin or tenderloin, thinly sliced into strips
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces (225 grams) mushrooms, sliced
- 2 tablespoons all-purpose flour
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/2 cup sour cream
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish (optional)
- Cooked egg noodles, rice, or mashed potatoes, for serving
Instructions:
Prepare the Beef:
- Slice the beef into thin strips. Season them with a pinch of salt and black pepper.
Sauté the Beef:
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the sliced beef and cook for 2-3 minutes per side, or until it's browned and cooked to your desired level of doneness.
- Remove the beef from the skillet and set it aside.
Sauté the Vegetables:
- In the same skillet, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent.
Cook the Mushrooms:
- Add the sliced mushrooms to the skillet and cook for an additional 4-5 minutes, or until they are tender and have released their moisture.
Make a Roux:
- Sprinkle 2 tablespoons of all-purpose flour over the mushroom mixture. Stir well to combine, allowing the flour to cook for about 2 minutes to remove the raw taste.
Add Liquid Ingredients:
- Pour in 1 cup of beef broth, 1 tablespoon of Worcestershire sauce, and 1 teaspoon of Dijon mustard. Stir to combine.
Simmer:
- Reduce the heat to medium-low and simmer the sauce for about 5 minutes, or until it thickens.
Add the Beef Back:
- Return the cooked beef to the skillet and stir to combine it with the sauce.
Finish with Sour Cream:
- Remove the skillet from heat, and gently fold in 1/2 cup of sour cream until the sauce is creamy and well mixed. Be careful not to boil the sauce after adding the sour cream to prevent curdling.
Season and Garnish:
- Taste and adjust the seasoning with additional salt and pepper if needed.
- Garnish with chopped fresh parsley, if desired.
Serve:
- Serve your Beef Stroganoff hot over cooked egg noodles, rice, or mashed potatoes.
Beef Stroganoff is a rich and comforting dish that's perfect for a satisfying family dinner or special occasions. Enjoy!
