Beef Stroganoff

 Ingredients:

  • 1 pound (450 grams) beef sirloin or tenderloin, thinly sliced into strips
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces (225 grams) mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 cup sour cream
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)
  • Cooked egg noodles, rice, or mashed potatoes, for serving

Instructions:

  1. Prepare the Beef:

    • Slice the beef into thin strips. Season them with a pinch of salt and black pepper.
  2. Sauté the Beef:

    • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
    • Add the sliced beef and cook for 2-3 minutes per side, or until it's browned and cooked to your desired level of doneness.
    • Remove the beef from the skillet and set it aside.
  3. Sauté the Vegetables:

    • In the same skillet, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent.
  4. Cook the Mushrooms:

    • Add the sliced mushrooms to the skillet and cook for an additional 4-5 minutes, or until they are tender and have released their moisture.
  5. Make a Roux:

    • Sprinkle 2 tablespoons of all-purpose flour over the mushroom mixture. Stir well to combine, allowing the flour to cook for about 2 minutes to remove the raw taste.
  6. Add Liquid Ingredients:

    • Pour in 1 cup of beef broth, 1 tablespoon of Worcestershire sauce, and 1 teaspoon of Dijon mustard. Stir to combine.
  7. Simmer:

    • Reduce the heat to medium-low and simmer the sauce for about 5 minutes, or until it thickens.
  8. Add the Beef Back:

    • Return the cooked beef to the skillet and stir to combine it with the sauce.
  9. Finish with Sour Cream:

    • Remove the skillet from heat, and gently fold in 1/2 cup of sour cream until the sauce is creamy and well mixed. Be careful not to boil the sauce after adding the sour cream to prevent curdling.
  10. Season and Garnish:

    • Taste and adjust the seasoning with additional salt and pepper if needed.
    • Garnish with chopped fresh parsley, if desired.
  11. Serve:

    • Serve your Beef Stroganoff hot over cooked egg noodles, rice, or mashed potatoes.
